Zucchini Pie

1 package refrigerated biscuits
1 pound ground beef
2 cups shredded zucchini
2 medium stalks celery, diced
1 ½ tsp. salt
1 small onion diced
1 tsp. dry mustard
¼ tsp. pepper
1/3 cup milk
2 eggs
½ cup shredded cheddar cheese
Grease a 9” pie plate. On a lightly floured surface with a rolling pin, roll each biscuit 1/8” think and cut in half. Arrange biscuit halves on the bottom and sides of the pie pan. Gently press edges of biscuits together to make a pie crust. Set aside. In a skillet over high heat, brown beef and drain. Add zucchini, celery, salt, onion, dry mustard and pepper until juices evaporate. Remove from heat. Preheat oven to 350°. In a small bowl with a wire whisk beat milk and eggs until well blended. Stir into meat mixture. Spoon meat mixture into biscuit lined pie plate. Sprinkle cheddar cheese on top. Bake 30 minutes or until biscuits are golden brown.
