Rhubarb Dessert

1 cup flour
1 tsp. baking soda
¼ tsp. salt
2 tsp. shortening
1 egg
2 Tbsp. milk
2-3 cups rhubarb
1 package red Jello
Streusel:
1 cup sugar
½ cup flour
½ cup melted butter
¾ cup oatmeal
Mix first 3 ingredients together and sift. Add 2 tsp. shortening and mix for a pie crust. Add 1 beaten egg mixed with milk. Press crust into and 8×8” pan. Put 2-3 cups chopped rhubarb on top of pie crust. Cover with 1 package red Jello. Mix streusel ingredients and place on top. Bake at 375° until sides are brown. Serve cooled with or without whipped cream.
