Kung Pao Shrimp

Sauce:
1 Tbsp. soy sauce
¼ cup orange juice
2 Tbsp. red wine vinegar
1 ½ tsp. cornstarch
1 Tbsp. sugar

1 Tbsp. vegetable oil
1 tsp. crushed red pepper flakes
6 green onions
2 cloves garlic
1 ½ tsp. fresh grated ginger
1 large red bell pepper
1 pound medium to large shrimp, peeled and deveined
½ cup roasted peanuts , chopped
Combine sauce ingredients in a bowl and set aside. In a pan on high heat, add oil, then onions, garlic, ginger, and red pepper flakes. Stir fry 30 seconds. Add bell pepper and stir fry for 1 minute stirring constantly. Add shrimp and peanuts. Cook until shrimp turns pink (about 3 minutes). Add sauce, stir and stir fry for 30 seconds. Serve.
