Kathy’s Lasagna

Sauce:
1 pound pork sausage
1 pound ground beef
½ cup finely chopped onion
2 cloves crushed garlic
1 Tbsp. sugar
1 tsp. salt
1 ½ tsp. basil
¼ tsp. pepper
½ tsp. rosemary
½ tsp. oregano
2 Tbsp. parsley
6 ounces tomato paste
15 ounces tomato sauce
12 ounce can tomato juice or V-8

Cheese:
16 ounces cottage cheese
1 egg
½ tsp. salt
12 ounces mozzarella
¾ cup Parmesan cheese

8-10 lasagna noodles
Brown pork and beef and drain fat. Add onion, garlic and cook for 20 minutes. Add sugar, salt basil, pepper, rosemary, oregano, and parsley. Mix well. Add tomato paste and sauce. Add tomato juice/V-8. Bring to a boil, reduce heat and simmer for 1 ½ hours. Noodles: In boiling water with 2 Tbsp. salt and 1 Tbsp. oil boil noodles for 15 minutes. Drain and rinse in cold water. Cheeses: Combine cottage cheese, egg and salt in a food processor until smooth. Using a greased 13×9” pan layer ½ cup sauce, 4-5 noodles, ½ cup cheese mix, 1/3 of the mozzarella, ¼ of the parmesan. Repeat. Then add rest of the sauce, mozzarella and parmesan cheese. Cover with foil and bake at 375° for 1 ½ hours.
