Cranberry Oatmeal Bars

1/2-3/4 cup packed brown sugar
1/2 cup sugar
1 (8 oz.) container vanilla or plain low-fat yogurt
2 egg whites, lightly beaten
2 Tbsp. vegetable oil
2 Tbsp. fat-free milk
2 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt (optional)
3 cups oats (old fashioned or quick, uncooked)
1 cups diced dried mixed fruit, raisins, or dried cranberries
Icing:
1 cup powdered sugar
3/4 Tbsp. butter, soft
1/4 tsp. vanilla extract
1/8 tsp. salt
2 to 3 tsp. milk
In a large bowl, combine the sugars, yogurt, egg whites, oil, milk and vanilla. Mix well. In a medium bowl, combine flour, baking soda, cinnamon, and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and fruit. Spread dough onto bottom of ungreased 9×13 pan and bake in a preheated 350 oven for 28-32 minutes or until lightly brown. Cool completely on wire rack. Ice them (recipe below). Cut into bars and store in a covered container. Combine all icing ingredients in small mixing bowl. Stir until smooth and well blended. Adjust for spreading consistency if necessary, adding more milk or more confectioners’ sugar. Spread icing over bars.
