Carmel Apple Cheesecake Bars With Streusel Topping

2 cups flour
½ cup packed brown sugar
2 sticks butter, softened
2 (8 ounce) package cream cheese
½ cup sugar + 2 Tbsp. divided
2 eggs
1 tsp. vanilla
3 large Granny Smith apples, peeled cored and chopped
½ tsp. cinnamon
¼ tsp. nutmeg
Streusel Topping:
1 cup firmly packed brown sugar
1 cup flour
½ cup quick cooking oats
1 stick softened butter
Carmel sauce
Preheat oven to 400°. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press into a 13×9” lightly greased pan. Bake 15 minutes or until lightly browned. In a large bowl beat cream cheese and sugar until smooth. Add eggs, one at a time and vanilla. Pour over warm crust. In a small bowl mix chopped apples with 2 Tbsp. sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Prepare streusel topping by mixing ingredients together. Then spoon streusel topping over apples. Bake 30 minutes or until filling is set. Drizzle with caramel topping. Let cool, then refrigerate.
