Almost-Famous Cheddar Biscuits

Biscuits:
1 ¾ cups flour
1 Tbsp. & 2 tsp. baking powder
2 ½ tsp. sugar
¼ tsp. salt
3 Tbsp. vegetable shortening
4 Tbsp. cold unsalted butter cut in ½” pieces
1 ½ cups shredded cheddar cheese
¾ cup milk

Garlic Butter
3 Tbsp. unsalted butter
1 clove crushed garlic
1 tsp. chopped fresh parsley

Position rack into the upper of the oven and preheat to 425°. Lightly mist a cookie sheet with cooking spray. Pulse the flour, backing powder, sugar and salt in a food processor. Add shortening and pulse until combined. Add butter, pulse 4-5 times or until the butter is in pea-sized pieces. Add the cheese and pulse 2-3 times. Pour in the milk and pulse just enough that the mixture is moistened and forms a shaggy dough. Turn onto a clean surface and gently knead until the dough comes together. Do not overwork it or the biscuits will be tough. Drop the dough onto the baking sheet in scant ¼ cup portions, 2” apart. Bake until golden brown; 15-20 minutes. Meanwhile make garlic butter. Melt butter with garlic in a saucepan over medium heat. Cook 1 minute. Remove from heat and stir in parsley. Brush biscuits with garlic butter and serve warm.
